Visual appearance is crucial, but internal quality attributes are equally vital to marketability of grapes. That's why grape quality processes measuring Brix, i.e., sugar content along with color, size, and weight.

The common grape quality parameters are color, shape, size. maturity, skin firmness, pulp stability, stalk strength and color

Internal quality

The sugar to acid ratio determines the sweetness of grapes. Called the Total Soluble Solids (TSS) content, the metric for assessing is °Brix.

One degree of Brix is 1 gram of sucrose in 100 grams of solution. Each variety of grape has a different Brix content, creating a unique taste.

Insects: evidence of live insects.
Diseases: fungal or bacterial rots with decaying areas.
Physical/Pest Damage: chemical spray residue.
Temperature Injury: freeze damaged with soft, flabby, dull or browning berries or desiccated or heat injury with soft, or shriveled berries.

Minor defects
Physical Damage: bleaching, Sulphur injury, squashed, split, or broken skin.
Temperature Injury: Sunburn with brown/cream scalding.
Physiological Disorder: greenish-brown discoloration, slight dehydration of bunch stems, stem end ring splits or vertical splits, or shatter berries.
Blemishes: russet-like scarring (insect damage), dark superficial rub/abrasion marks, hail marks, sunburn, or other unsightly blemishes.
